Buffalo Chicken: My Go-To Carnivore Meal
(no carbs, no sugar, full Carnivore with all the Buffalo flavor)
If you are tired of eating plain chicken breast and calling it a meal, this one is for you.
This Buffalo Chicken recipe is one of my most cooked meals. It is simple, it is loaded with protein and fat, it meal preps like a dream, and the flavor is so good that people who are not even doing Carnivore ask me for the recipe.
All you need is a handful of ingredients to have tender, smoky, spicy buffalo chicken that works for lunch, dinner, meal prep, or feeding a crowd. My wife makes it Keto by throwing it over a bed of cauliflower rice. I eat it straight or topped with cheese. Either way it disappears fast.
Let me walk you through exactly how I make it.
Why This Recipe Works on Carnivore
Chicken breast gets a bad reputation on Carnivore because it is lean. And lean means you have to add fat intentionally, which is actually the point.
This recipe solves that problem before you even think about it. The sauce is built on heavy whipping cream and salted butter. You are cooking fat directly into the dish. The chicken absorbs it. Every bite has the protein from the chicken and the fat from the butter and cream baked right in.
Frank's Red Hot Buffalo Sauce is the other key. Zero sugar. Zero carbs. Pure flavor. It is one of the few sauces that is completely clean for Carnivore and Keto and tastes like the real thing because it is the real thing. No compromises, no artificial sweeteners, no ingredient list that reads like a chemistry textbook.
And then there is my secret ingredient. Liquid smoke.
Liquid smoke is what takes this from good to the kind of good where people ask you what is in it. It adds a deep, smoky layer of flavor that makes the chicken taste like it spent hours on a grill even if you are cooking it in your oven or on a stovetop. A small amount goes a long way. It is the thing that makes this recipe different from every other buffalo chicken recipe out there.

That is it. Nine ingredients. Most of them are already in your kitchen.
A note on quantities: I cook in bulk so I scale this depending on how many pounds of chicken I am working with. The sauce recipe below is built to coat a generous batch. Scale up or down based on how much you are making.
Step One: Build the Creamy Butter Sauce
This is where the magic starts.
In a saucepan over medium heat, melt a generous amount of salted butter. Do not be shy here. Remember what we talked about in the fat blog. The butter is not a garnish. It is a fuel source and it is what makes this sauce rich and coating rather than thin and watery.
Once the butter is melted, add your heavy whipping cream. Let them come together over the heat, stirring as you go. You are building a base here. The cream adds body and fat and a slight richness that cuts the heat of the buffalo sauce just enough to make it addictive rather than just spicy.
Once the butter and cream are combined and warm, add your Frank's RedHot Buffalo Sauce. The ratio is up to you depending on how much heat you want. I go heavy on the Frank's. My wife goes a little lighter. Start with a strong pour and taste as you go.
Stir everything together over low heat until the sauce is smooth, combined, and smelling incredible. Set it aside. You are coming back to it.
Step Two: Season the Chicken
Take your chicken breasts and season them directly.
Smoked paprika first. A good even coat on all sides. Smoked paprika is doing double duty here because it adds color and a subtle smokiness that layers with the liquid smoke you are adding later.
Then garlic powder and onion powder. Both of these add depth and savory flavor without adding carbs or anything that does not belong on a clean Carnivore or Keto plate.
Sea salt last. Season generously. Properly salted meat tastes completely different from under-salted meat. Do not be timid.
At this point your chicken is seasoned and ready to cook.
I even add a little Frank's Red Hot Buffalo Sauce directly to the chicken for an extra kick.
Step Three: The Liquid Smoke Finish
Here is the secret ingredient moment.
As the chicken finishes cooking, add liquid smoke. A light drizzle depending on the batch size. You do not need a lot. Liquid smoke is concentrated and a little goes a long way.
What it does is give the chicken that deep, backyard-BBQ, been-on-the-smoker-all-day flavor profile that you absolutely cannot get from seasoning alone. It is the thing that makes people taste this and immediately ask what you did differently.
If you have an actual smoker, even better. I will get to the smoking instructions below. But liquid smoke means you can get that flavor without any special equipment, which makes this recipe accessible regardless of your kitchen setup.
Step Four: Cook the Chicken and Add Sauce
Cook in a skillet over medium-high heat with butter in the pan. About 6 to 7 minutes per side for standard-size chicken breasts. Same target internal temp of 165 or until the chicken is fully cooked.
Next pour the chicken and the sauce together in a pan. Take your creamy buffalo butter sauce and pour it over the chicken. Toss to coat. Every piece should be covered.
Now taste it.
If you want more heat, add more Frank's. If you want it richer, add a little more butter. If you want more smoke, a few more drops of liquid smoke does it. This is the moment to dial it in to exactly where you want it before you portion and serve.
The sauce should cling to the chicken. It should look glossy and thick, not thin and runny. If it needs to thicken up, put it back on low heat for a couple of minutes and let the cream reduce slightly.
Step Five (optional if you have a smoker): Smoke for extra flavor
If you have a smoker, we can take it up a notch and if not then skip this step as your chicken is ready to eat.
Smoker method: If you have a smoker and you want to take this to another level entirely, smoke the chicken at 185 degrees Fahrenheit for approximately 2 to 3 hours. The low and slow smoke does things to chicken breast that no oven can replicate. The liquid smoke step above is still worth doing even if you are using a real smoker because the two layers of smoke flavor stack.
Step Six: This is where I love this recipe most.
You made a big batch. Now you portion it.
For meal prep: Divide into containers. This keeps in the fridge for 4 to 5 days without any drop in quality. The sauce actually gets better as it sits and the flavors deepen. Reheat in a pan, toaster oven or microwave and you have a complete meal ready in under 2 minutes.
For serving right now: Plate it hot. Top it with your cheese of choice. I like a sharp cheddar. My wife goes with pepper jack when she wants more heat. Both are great.
Serving options depending on your protocol:
Strict Carnivore: Chicken and sauce as is. Top with cheese. Done.
Keto or Carnivore-ish: Serve over cauliflower rice. The sauce soaks into the cauliflower rice and it is genuinely one of the best low-carb meals you will make.
Feeding a crowd: This scales beautifully. Double or triple the batch and you have a dish that works for a group without any additional effort beyond volume.

You can find it at basically any grocery store. It is usually in the condiment or BBQ aisle. The most common brand is Colgin. It comes in different wood flavors including hickory, mesquite, and applewood. I go with hickory for this recipe because it is a classic, bold smoke flavor that pairs perfectly with buffalo sauce.
Check your label and make sure you are not grabbing one with added sugar or a long list of ingredients that do not need to be there.
